Growing zucchini is a fun and easy vegetable to start in your vegetable garden.
But, if you grow zucchini, you’ll know you end up with A LOT of it! It grows like a wild child, so quickly and out of control! So what do you do?
Make zucchini bread!
Zucchini Bread is a delicious and healthy way to enjoy your zucchini (you can even freeze it or give to friends as gifts!), and it’s also a great way to get your veggie-haters to eat it.
This bread is so delicious, they won’t even taste the zucchini!
Zucchini Bread Recipe
Ingredients:
- 3 cups all purpose flour
- 1 tsp salt
- 1 tsp baking soda
- 1 tsp baking powder
- 4 tsp cinnamon
- 3 1/2 cups grated zucchini
- 3 eggs
- 1/2 cup applesauce
- 1/2 cup vegetable oil
- 2 1/4 cups sugar
- 4 tsp vanilla extract

- 1/2 cup applesauce
- 1/2 cup vegetable oil
- 2 1/4 cups sugar
- 4 tsp vanilla extract
Instructions
- Preheat oven 350 degrees F
- Spray and flour two 4 x 8 loaf pans
- In a bowl combine flour, salt, baking soda, baking powder and cinnamon.
- Shred zucchini in a food processor.
- In a mixer, beat eggs then add applesauce, oil, sugar and vanilla until mixed well.
- Add the dry ingredients 1/4 at a time.
- Once it's all mixed together, stir in the shredded zucchini with a spatula.
- Divide and pour into each loaf pan.
- Bake 55-60 minutes or until toothpick comes out clean when checked.
- Cool and enjoy

I LOVE a good zucchini bread <3 You are absolutely right! They do grow like wild ones….Your neighbors will despise you at the end of that growing season LOL. Everyone in the neighborhood gets sick of us! Especially when you get a bumper crop LOL.

How many zucchini did you use to get 3-1/2 cups shredded? I have one in the fridge, and probably need 2 maybe 3 more? Love the look of the recipe and want to try it soon.

It depends on the size of the zucchini’s. Some in my garden were HA-UGE (like a foot long!)! Others, were teeny tiny.
