This delicious and simple hamburger veggie soup is one of our family’s favorite go-to meals.
It’s super quick and easy to make. I just LOVE one pot meals, especially ones that are super tasty!!!
It uses freezer and pantry staples, comes together in about 30 minutes, and makes a big pot that reheats and freezes beautifully for lunches or another easy dinner.
Sometimes I’ll cook the hamburger ahead in batches and freeze the cooked meat in zipper bags. When it gets to be a busy night and I need a dinner super fast, I pull out all the ingredients, throw them in a stock pot and let it simmer until it’s cooked.

The hamburger makes it hearty and filling, and the broth makes it light enough, even for summer nights. Perfect for winter AND summer!
Quick & Easy Hamburger Vegetable Soup Recipe
Ingredients:
- 1 lb Hamburger
- 2 TSP of Worshestershire Sauce
- 3 Cubes Knorr Beef Bouillon
- 2 Beef Stock Cartons (32 oz each)
- 1 Big bag of frozen mixed vegetables (in this case, I used two smaller bags; the kind you use is not important)
- 1 Can of Corn (I prefer Del Monte brand)
- 2 Cans of Italian-Style (or French-Style) Green Beans
- 1 Can tomatoes with green chilies
- 1 Can diced tomatoes
- 8 Quart Stockpot (here’s my personal favorite)
Hamburger Vegetable Soup Variations
- If you like it to have an extra “tomato-y” flavor, which I do, I’ll often swap 2 of the 3 Knorr Beef Bouillon cubes for Knorr’s Tomato Bouillon cubes instead.
- While it doesn’t need it, you could add pasta or beans if you want it extra hearty.
How to Store and Freeze Hamburger Soup
- Fridge: Store in airtight containers 3–4 days.
- Freezer: Cool completely, freeze in single-serve containers for lunches or freezer bags up to 3 months.
- Reheat: Thaw overnight in the fridge, then warm on the stove over low heat or microwave.
What to Serve with Hamburger Vegetable Soup
- Crunchy bread with butter or EVOO
- Simple side salad with tomatoes
- Grilled cheese sandwich for an extra-comfort meal
Instructions:
Step 1: Start with an 8-quart stockpot and add some Worcestershire sauce to brown the meat and cook it through.
Step 2: Drain the grease from your hamburger (I like to rinse the hamburger to get all that grease off, but you don’t have to.)
Step 3: Add all the rest of the ingredients in the pot.
Step 4: Let simmer for 30 minutes on medium-high heat and voila, you’ve got a quick and easy meal that is sure to please!
Can I make hamburger vegetable soup in a slow cooker?
Yes! Just cook your hamburger all the way through in a skillet and then add it to the crockpot with all the other ingredients. Let all the ingredients cook for 4-6 hours on high heat.
Can I use fresh vegetables instead of frozen?
Absolutely! This soup is very versatile. You can use any vegetables you and your family enjoy. I would keep the green beans and corn, though, as the base, and play around with the other veggies.
Can I use ground turkey instead of ground beef?
I wouldn’t. While it may make it a bit healthier, the flavor would be off because of the beef broth base.
