This delicious and simple hamburger veggie soup is one of our family’s favorite go-to meals. Sometimes I’ll cook the hamburger ahead in batches and freeze the cooked meat in sandwich baggies. When it gets to be a busy night and I need a dinner super fast, I pull out all the ingredients, throw them in a stock pot and let it simmer until it’s cooked. SUPER quick and easy and FULL OF FLAVOR!
The hamburger makes it hearty and filling, and the broth makes it light enough, even for summer nights.
Quick & Easy Hamburger Veggie Soup Recipe
Ingredients:
- 1 lb Hamburger
- 2 TBSP Knorr Beef Boullon (powder form)
- 2 Tubs Knorr Beef Homestyle Concentrated Stock
- 1 Packet Beef Stew seasoning mix
- 1 Bag of frozen mixed vegetables
- 1 Can tomatoes with green chili’s
- 1 Can diced tomatoes
- 8 Quart Stockpot (here’s my personal favorite)
Instructions:
Step 1: Add some Worcestershire sauce to brown the meat and cook it through.
Step 2: Drain the grease from your hamburger (I like to rinse the hamburger to get all that grease off, but you don’t have to.)
Step 3: Add your mixed veggies and hamburger to an 8 quart stockpot and fill the rest with water.
Broth:
To make the broth, add Knorr Beef Boullon, Beef Stew seasoning mix, Beef Bullon powder, and both cans of tomatoes in the pot with the other ingredients.
Let simmer for 30 minutes and voila!
Cost:
Cost to make this flavorful soup is $7.98. It lasts our family TWO complete meals. Add a couple slices of bread with butter or salad and you’re still under the $5/meal mark. Total cost per meal (soup only) $3.99.

I was wondering if I just wanted to use regular beef broth in the cans, how many would I need??

Marla, gosh, I haven’t made it that way in a little while, so I’m not sure. I would say have 6-8 cans (or 3 cartons) on hand and just put in the ingredients first, then fill the pot up with your broth.

This sounds wonderful! Haven’t tried it like this yet, but wanted to tell you an alternative, in case you happen to have it on hand: V8 juice! I still add beef bouillon, but it’s great.
