This homemade chunky potato soup is a very simple and easy to make recipe that is packed with potato flavor, perfect for your recipe arsenal and suitable for vegetarians!
Creamy Potato Soup
- 2 Tbsps butter
- ¼ Cup flour
- ¼ Cup heavy cream
- 2 Cups water
- 3 Red potatoes
- Chopped chives to taste
- Parmesan cheese to taste
- Salt and pepper to taste

Instructions
- In a saucepan over medium heat, melt the butter.
- Add the flour and mix it, until you have a thick batter like texture.
- Stir in the heavy cream, then add the water, salt and pepper.
- Chop the potatoes and add them.
- Cover and let it simmer for 30 minutes.
- Serve and top with the Parmesan cheese, chopped chives, and more pepper.

I love cream based soups with potatoes. This soup reminds me of my ham, potato and corn chowder. So comforting for cold, winter days.
