Zucchini Bread

Ingredients
  

  • 3 cups all purpose flour
  • 1 tsp salt
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 4 tsp cinnamon
  • 3 1/2 cups grated zucchini
  • 3 eggs
  • 1/2 cup applesauce
  • 1/2 cup vegetable oil
  • 2 1/4 cups sugar
  • 4 tsp vanilla extract

Method
 

  1. Preheat oven 350 degrees F
  2. Spray and flour two 4 x 8 loaf pans
  3. In a bowl combine flour, salt, baking soda, baking powder and cinnamon.
  4. Shred zucchini in a food processor.
  5. In a mixer, beat eggs then add applesauce, oil, sugar and vanilla until mixed well.
  6. Add the dry ingredients 1/4 at a time.
  7. Once it's all mixed together, stir in the shredded zucchini with a spatula.
  8. Divide and pour into each loaf pan.
  9. Bake 55-60 minutes or until toothpick comes out clean when checked.
  10. Cool and enjoy
