Method
- Preheat oven 350 degrees F
- Spray and flour two 4 x 8 loaf pans
- In a bowl combine flour, salt, baking soda, baking powder and cinnamon.
- Shred zucchini in a food processor.
- In a mixer, beat eggs then add applesauce, oil, sugar and vanilla until mixed well.
- Add the dry ingredients 1/4 at a time.
- Once it's all mixed together, stir in the shredded zucchini with a spatula.
- Divide and pour into each loaf pan.
- Bake 55-60 minutes or until toothpick comes out clean when checked.
- Cool and enjoy
