Method
- Preheat oven to 400 degrees. Spray a Corningware dish with coconut oil to prevent sticking.
- Add 10 red potatoes, diced to your baking dish.
- Layer polish sausage over the potatoes.
- Add corn, pepperchini's, and milk to the top.
- Cover top with shredded cheese and Italian seasoning.
- Cover with aluminum foil and bake until potatoes are fork-tender.
- Remove aluminum foil and continue cooking until the cheese is golden brown.
