Lemon Zest Pudding

Ingredients
  

  • 1 cup milk
  • 1 tbsp lemon juice
  • 1 tbsp lemon zest
  • 1 egg
  • 1/2 cup cornstarch
  • 1/4 cup sugar
  • 1/2 tsp vanilla extract
  • Whip cream

Method
 

  1. In a saucepan over medium heat mix the milk, lemon zest, egg, and lemon juice
  2. Slowly incorporate the cornstarch and sugar. Stir regularly.
  3. Cook until the first bubble forms, and reduce to low heat.
  4. Add the vanilla and stir for 2 more minutes.
  5. Remove from the heat and transfer to a bowl.
  6. Let it cool down for 15 minutes, then cover it and take to the fridge for 3 hours.
