Preheat the oven to 350 degrees.
Combine the sugar, butter, vanilla, milk and eggs and mix well. Stir in flour, baking powder and mix well.
To get the nice orange cupcake color add in 1 drop of red food coloring and 2 drops of yellow food coloring and repeat depending on how orange you want your cupcakes. I had to do this probably 3-4 times before I got the color I liked.
Pour the batter evenly into the muffin tins and bake 18-20 minutes. Insert a toothpick at about 18 minutes. If it comes out clean your cupcakes are done.
*Frosting Directions*
Using a hand mixer, combine the softened butter, powdered sugar, vanilla and a few tablespoons of milk (start with 3-4). Beat until light and fluffy and add in another tablespoon or two of milk and continue to beat until nice a fluffy (about 3-4 minutes on high).
*Purple Frosting Directions*
Add 3 drops of red food coloring and 1 drop of blue food coloring and mix well. Repeat this step depending on how purple you want your frosting to be.
Once the cupcakes are completely cooled, frost generously and add some Halloween sprinkles on top.
*Makes approximately 12 cupcakes. Store in an airtight container up to 1 week.
